From Decanter: Giacomo Tachis is one of the fathers of Italian wine and has been named by Decanter the Decanter Man of the Year 2011. He is one of the forefathers of the Super Tuscan Wine and helped in the creation of wines such as Sassicaia at the Bolgheri Estate of San Guido. He is known for introducing the Bordeaux variety Cabernet Sauvignon to the Super Tuscan wines Sassicaia, Tignanello and Solaia. Even though he has retired he is very much still involved in wine. It’s reported that the wine maker Markus Bachmann has created & invented a special speaker that he uses to play classical music and other types of music to the fermenting grape juice. He says “the sound waves have a positive influence in the maturing process and produce a better tasting wine”.
Corkage Laws: Wine spectator reported that more restaurants now are allowing corkage because in some states of the USA there is a corkage ban. You have to have a special license to allow Corkage in your restaurant. It sounds very complicated and it’s something we don’t have a problem with in Hong Kong as a consumer, we just ring up the restaurant first to see how much the corkage is before we bring along our special wine from our collection. It’s ironic the Restaurateurs in USA want to allow corkage and in Hong Kong restaurateurs want to ban corkage.
In February we saw a huge Earthquake of 6.3 hit Christchurch, there was a large loss of life and people are again starting to rebuild their life. Wineries were also affected and some had just
Started getting over the damage from the earthquake last September’s. Christchurch is on the east coast about halfway down the South Island and also sits in the middle of the Canterbury Wine Appellation and generally this time the Wineries didn’t get hit as much as that did in September last year.
